With these unfamiliar times, one thing most of us can say we have a lot of extra time in our hands. How ever, as much as I’m enjoying spending time in my kitchen testing out new vegan recipes. I don’t like to stuck there for hours.
This recipe I can promise you only need to be in your kitchen for twenty minutes max. And you still end up with an amazing raw vegan dessert.
As much as I wish to take all the credit for this recipe unfortunately, I can’t. One of the Vegan Queen Alexandra Andersson a.k.a @fivesechealth is the original creator for this recipe. But I have to add my spin on it and replace a few ingredients. And as I don’t like to scroll hours to find the recipe let’s just get started to it.
For the base you will need
- 0.5 cup dates
- 1.5 cup oat flour
- 0.5 cup peanut butter
- 0.25 cup maple syrup / or for non vegan alternative you can use honey
- 1 pinch salt
- 70g dark chocolate
- 1 pinch salt | I used sea salt |
I used a food processor but you can do it in a blender too. Just mix together the oats with the soaked dates. Once is combined and you got a sticky dow transferred to a mold or baking tray lined with parchment paper. I used a 6×8 inch (15x20cm) one. Then place it in the fridge or freezer for 10 min.
In the meantime mist together with the peanut butter, maple syrup, or honey, and the salt till getting well combined. After the ten minutes just pour it on the top of your base and put back to the fridge for another 5minutes.
After al it left to melt the dark chocolate and cover the top. after a few minutes when the chocolate starts to set lightly sprinkle a bit extra sea salt on a top! 🙂
