I have teamed up with [yellow tail] to create a recipe that would go well with a glass of Rosé. My delicious stuffed shell pasta recipe. It is perfect for those weekend afternoons when you come together with your friends or for your next date nights.
Rosé wines have always been my favorites. Fresh and sweet at the same time with a fruity flavor. It reminds me of summer nights. When you have dinner outside in the garden and as an entertainment, you got to watch the sky shifting colors.
- 125 g extra firm tofu
- 1/2 garlic
- 1 tsp lemon juice
The Sauce & Topping
- Organic Cherry tomato sauce
- Parmesan cheese
- Oliva Oil
Start with cooking the pasta for 8 minutes in boiling water. Make sure not to cook the pasta completely because it will need to bake it in the oven later. In the meantime blend it together the tofu with the garlic and lemon juice. Add salt and pepper as you like. I personally like to start with just a bit. After it, all blend it and you get a nice creamy consistency start folding in the chopped spinach.
When the pasta is done cool it down and start filling up with the tofu & spinach mixture. I like to add some tomato sauce to the bottom of my pan and sprinkle the top with some vegan parmesan cheese. Then all is left to do is bake it in a preheated oven (175′) for 10-15 minutes.
