The Best Easy Vegan Tropical Chia Parfait


This is the time of the year when we all just want to escape our everyday reality for a little while and go to a tropical island to enjoy all the sunshine & aloha lifestyle.

Even tho the borders are slowly opening up, travelling is really stressful. But a little morning daydreaming never hurt, so if you want to have that tropical chia parfait breakfast that will take your soul right to that magical place? I got you, Babe!

What screams more sunshine and paradise than fresh mano? Yep, I thought so … Nothing 🙂 So I know all foodie bloggers feel like having to write a novella around their recipe and how original it is, but my main inspiration was that I had one mango that was in the stage of now or never. I haven’t felt like just munching on, so I blended the whole thing just as it is. Nothing extra, no sugar or anything, just the pure fruit meet.

So let’s cut to the chase. All you need is:
  • One mango ( or a cup of fresh or frozen fruit of your choice ) Just blend it till it became pure like consistency.
  • Coconut yoghurt – You can use it as plain or add some chia seeds and vanilla extract to it. I used vanilla flavoured coconut yoghurt.
  • Chia seeds – 2/5 tbsp
  • Vegan custard cream – I mixed the custard and the chia seeds a night before, so in the morning, it’s ready to layer up this sassy breakfast parfait
  • Granola – for that extra crunch

Once you have everything, you can just find a cup or even a bowl and start layering 🙂 I made two and had the second one the day after, and it was still just as good & tasty as the day before. It’s great for meal prep and the Chia seed he’s you feel fuller for longer.
